Traditional Anzac Biscuits


1 cup rolled oats
1 cup plain flour
1 cup sugar
3/4 cup coconut
125g butter
1 tablespoon of golden syrup or honey
1 tablespoon bicarbonate of soda
2 tablespoons boiling water


  • Combine oats, sifted flour, sugar and coconut in large bowl
  • Combine butter and golden syrup in pan, stir over low heat until butter is melted
  • Combine water and soda, add to butter mixture, stir into dry ingredients while mixture is warm
  • Place mounds of about 3 level tsp of mixture on greased tray, about 4 cms apart
  • Press down lightly on each pile of mixture
  • Bake in slow oven (150 degrees C or 300 degrees F) for about 20 mins or until golden brown
  • Loosen biscuits while still warm
  • Cool on tray
  • Makes about 30

Father Jim's Favourite Sultana Anzac Biscuits

Substitute 1 cup of sultanas for the 3/4 cup of coconut

Our Favourite Chocolate Anzac Biscuits

Substitute 1/4 cup of cocoa powder and 100g milk chocolate for the 3/4 cup of coconut

The taste-testers
Anzac biscuits are the favourite biscuits of Father James Tierney, author of the Bush Boys books. Whenever we visit Father, we take along a gift of freshly baked Anzac biscuits to give to him. He likes the sultana variation best!

Of course, Father Jim's Bush Boys always take along a good supply of this biscuit when they head out into the bush in search of adventure.
